The morning dawned cold and crisp with frost adding
sparkle to the yard.It was the kind of
morning that just begged for a warm, gooey muffin.
Something chocolatey (of course) but I also
wanted something with a little texture and interest.These muffins were just what I was looking
for. They have the chocolate I was
craving with oatmeal to add a little texture and peanut butter chips for
interest.
They were wonderful out of the
oven and even better as an afternoon snack!Did I mention I adore these muffins!!I hope you will try them and enjoy a sweet morning.
1 ¼ cup flour ⅓ cup brown sugar ⅓ cup cocoa 1 Tbsp baking powder ¾ cup quick oats ½ cup chocolate chips ½ cup peanut butter
chips ⅓ cup butter, melted 1 egg, beaten 1 cup milk 1 tsp vanilla
Preheat oven to 350.
Grease or line a muffin tin. Mix flour, brown sugar,
cocoa, baking powder and quick oats. Stir in chocolate and
peanut butter chips. In a separate bowl, mix
butter, egg, milk and vanilla. Add wet mixture to dry
mixture. Stir until combined. Spoon batter into muffin
tins. Bake 20-25 minutes.
