What a wonderful morning!!! It is the type of summer morning that you dream about- brillant blue sky, light breeze, low humidity and that just right summer temperature-warm enough for swimming but not warm enough to melt. The birds are singing with joy and it is a sweet, sweet morning!
To celebrate I made a new recipe, Chocolate Strawberry Muffins. Daughter 2 looked at them and thought Really Mom, really they do not sound that good but she was surprised. She said they are interesting and I can make them again!! High praise from a finicky eater. So here is the recipe.
2 cups flour 1/3 cup cocoa
1/2 cup sugar 1 1/2 tsp baking soda
2 eggs 1 cup lowfat plain yogurt
1/4 cup melted butter 1 tsp vanilla
1 cup chopped strawberrries 1 cup chocolate chips
Preheat oven to 375
Grease muffin tins
In large bowl sift together flour, sugar, cocoa, baking soda
In another bowl stir together eggs, yogurt, melted butter, and vanilla
Toss strawberries with flour mixture
Pour egg mixture into flour mixture
Stir until flour is just moistened
Fold in chocolate chips
Spoon into muffin cups
Bake 20-25 minutes
