Today is the last day daughter 2 has to go to school for the year-she finishes her exams so she doesn't have to go back.  So of course she requested a sweet treat to celebrate, her favorite muffins Peanut Butter Chocolate Chip.  I mixed them up last night and stuck them in the fridge so when I got up all I had to do was scoop them into muffin tins and pop them in the oven.  By the time she left for school there were hot muffins! These muffins combine two favorites, peanut butter and chocolate chips and are scrumptious! They never last long around here because they also make an excellent after school snack.  Hope you enjoy this sweet morning treat as much as we do!





PEANUT BUTTER CHOCOLATE CHIP MUFFINS

2/3       cup smooth or crunchy peanut butter
2          tablespoons butter, melted
¾         cup sugar
2          eggs
1-1/2    teaspoons vanilla extract
1-1/2    cups flour
1-1/2    teaspoons baking powder
½         teaspoon baking soda
½         cup milk
6          ounces semisweet chocolate chips (1 cup)

1        Preheat oven to 350o F
2        In a large mixing bowl, combine peanut butter and melted butter, stir until well blended
3        Mix in sugar, eggs and vanilla
4        Combine flour with baking powder and baking soda
5        Add to peanut butter mixture along with milk and chocolate chips
6        Stir just until combined
7        Spoon batter into 12 paper lined 2-1/2 to 3-inch muffin tins.
8        Bake 20 to 25 minutes, or until muffins spring back when lightly touched in center
9        Serve warm or at room temperature
